Lead Brewer

FUERST WIACEK was founded in 2016 with the focus on brewing expressive, high-quality, hop-forward beers with an adventurous and curious attitude towards the brewing process.

After many years of brewing at several places near and far, we are finally building our own home and brewery in Berlin. As we entering this new and exciting stage, we are searching for great and highly passionate people who strive for excellence in everything they do.

You will be joining the team while we’re in the process of building and opening the brewery. This means some structures and processes might not be designed yet, and you will have the opportunity to join us in shaping the future of the FUERST WIACEK brewery.

Responsibilities

  • Managing a automatic 20 hl Krones/Steinecker brewhouse
  • Managing the cellar (carbonation, transfers, purging, CIP, hop & yeast & trub dumps)
  • Ensuring that the quality of beer leaving our brewery is excellent at all times
  • Maintaining accurate production records
  • Ensuring and measuring quality and consistency
  • Sensory analysis of ingredients and beers
  • Closely monitoring and recording fermentation and being able to identify quickly discrepancies
  • Closely monitoring and recording CO2 & oxygen levels
  • QA/QC responsibilities
  • Mill operation and malt preparation according to recipe (up to 700 kg per brew in 25 kg bags)
  • Spent grain removal
  • Yeast management (harvesting, pitching, yeast cell count and viability analysis)
  • Dry hopping and fruit additions through the top port of the tank at heights up to 8 meter
  • Management and tracking of inventory (malt, hops, brewing aids, cleaning supplies, …) and notifying when it is running low
  • Confident leading, supervising, coaching and training a team and assisting all production staff
  • Lead by example and utilize team-work skills to help the support team work together to increase production throughput and efficiency
  • Maintain an open dialogue with production staff, owners, and sales staff regarding all aspects
  • Continuously improvement of brewery operations
  • Researching and implementing industry trends
  • Development and maintenance of SOPs and ensuring they are being followed by all employees
  • Plant & equipment maintenance
  • Maintaining safety compliance requirements
  • Maintaining the brewery at the highest hygiene standards
  • General brewhouse cleaning, including floors, piping, tank exteriors, …
  • Assist in weekend duty rotations
  • Filling kegs
  • Willingness to take on tasks outside the scope of a Lead Brewer
  • Canning line assistance and willingness to operate a canning line

Qualifications

  • Minimum three years professional brewing experience
  • Experience with brewery operation systems (preferably Botec F1)
  • Experience in managing a brewery
  • Strong sensory analytics
  • Refined, educated and knowledgeable palate with deep understanding of off flavor compounds and knowledge of beer styles
  • Data-driven & experimental mindset with a thirst for knowledge
  • Meticulous attention to detail
  • Motivation for product conceptualization and recipe development
  • Passion for the industry and our brand
  • Self-motivated and able to work autonomously, with a focused and hard working attitude
  • Quick learner who is able to work with minimal or no supervision 
  • Proactive, Can-do attitude and positive outlook

  • Excellent verbal and written communication skills

  • Ability to troubleshoot issues and pivot plans quickly in order to coordinate corrective actions needed
  • Knowledge of mechanical and electrical engineering
  • Familiarity with Google G Suite (Docs, Sheets, Gmail)
  • Experience with CO2 / O2 measuring devices (C-Box, Pentair)
  • Brewery lab experience is a plus
  • Operating canning lines is a plus
  • Ability to safely operate a forklift is a plus
  • Experience filling KeyKegs is a plus
  • Effective time management skills with the ability to plan-ahead and manage multiple tasks
  • Ability to work in a clean and organized manner
  • Ability to safely handle hazardous chemicals in accordance with strict safety protocols
  • Ability to safely and repeatedly lift 25 kg to shoulder height
  • Willingness to travel the world occasionally to represent our brewery with knowledge, enthusiasm and hospitality at special events or festivals is a plus
  • Physical demands: Daily climbing ladders, bending, kneeling, crouching, crawling, working at height, dragging hoses, moving pumps, lifting bags of grains, boxes of hops and full kegs for several hours a day. Tolerating being exposed to wed and/or cold conditions. Specific vision abilities required by this job include close vision, depth perception, and ability to adjust focus. Must be able to maintain and regain balance.
